
A day’s drive through Gary, Chicago, and Milwaukee needs a good sandwich!! Why not make one yourself? In the car!
Here is our improvisation made en route to Madison on the second part of the Great Lakes tour.
The 80/90 Sandwich
- 1 loaf 5 seed bread (whole wheat base w/ pumpkin, poppy, sesame, flax and sunflower) from Nantucket Bakery, GR, MI
- 5 oz. Goat cheese, from Dancing Goat Creamery, Byron Center, MI
- 1/4 lb. Sicilian Castelvetrano Olives, from Russos via Italy
- 1 jar Coleman’s Mustard, England
- 2 tomatoes and 1 mini red onion, from Visser Farms, Zeeland, MI
- Spread the goat cheese on one side of the sandwich and the mustard on the other
- Thinly slice the olives, tomatoes and onion and layer on the bread
- EAT!

Yum! Having experienced much in-car eating with y’all last summer, I can safely say that this looks tasty…and easier than soup!
